My Orange Supreme Marmalade starts with fresh oranges picked from the tree in my backyard in Altadena, California (supplemented with ripe fruit I gathered in the Altadena, CA area).

I employ the “Supreming” method. to harvest the actual orange meat. This method separates the bitter casings (the pith) from the balance of the orange meat. The pith is the bitter part that produces the little “bite” or “kick” at the end of a taste of any other citrus marmalade. As a result, my marmalade is perfectly smooth, with only the pure, sweet orange flavor to enjoy. There is no aftertaste.
I use the Water Bath Canning method to preserve the marmalade. This method preserves the marmalade for 18 months or more without the addition of any chemicals or preservatives.
My marmalade never includes additional water or any other filler to “stretch” the product, as many commercial marmalade makers do, so you can be assured of getting the full fruit flavor.
